Delightfully handmade by David Bartel, chef of Hong Kong’s most secret French restaurant The Pirate Bay, this Countryside terrine (or simply ”Terrine de Campagne”) is slightly reminiscent of game flavour and has a smooth texture.
It is composed of natural ingredients and made without any conservative: pork belly, pork and chicken liver, Armagnac, egg, milk, breadcrump, salt, pepper and thyme. The terrine is cooked in a bain-marie.
