From the French part of Basque country, Chicken Basquaise is a one pot chicken stew where chicken thighs are braised in a piperade sauce, a traditional Basque dish made with tomatoes, onions and peppers/capsicum. An emblematic dish of the Basque region affection for colourful and peppery stews!
