Made in the Fromagerie de la Ribière, a cheese making farm located in Saint-Jouvent, the Brique Cendré is a raw goat milk cheese shaped as a brick, hence its name. The ash surrounding the cheese used to be a natural way to keep insects away and to conserve the cheese in the best possible way. Nowadays, the ash still has the same role but also adds a unique flavour to the cheese.
In the mouth, the milky paste gives a breath of fresh air with its softness and creamy texture.
