How to eat?

Rest the lamb at room temperature for 1 hour. Preheat your oven to 200°C, season generously, then roast for about 1 hour and 15 minutes for a pink center or 1 hour and 30 minutes for a more well-done result. Once the lamb reaches your desired level of doneness, remove it from the oven and let it rest for about 15 minutes.
