Under the guidance of Christian Janier, Meilleur Ouvrier de France, each wheel is selected from the high pastures of the Béarn region, where traditional methods create a cheese of authentic, rustic taste.
This pressed, uncooked tomme is made from raw sheep’s milk in the Pyrenees. It features a firm, compact texture with a natural, rustic grey rind. Its flavour is balanced and complex, offering subtle notes of dried herbs, nuts, and a delicate, lingering sweetness characteristic of mountain pastures.
Perfect on a cheese board, it pairs excellently with a fruity red wine like a Madiran or a dry Jurançon white. Enjoy it with black cherry jam or membrillo and rustic bread. It also grates beautifully over gratins and pasta dishes.
Storage: Keep refrigerated, wrapped in breathable paper. Allow to come to room temperature before serving to appreciate its full flavour.
