A favorite among low-carb dieters, Long Zucchini has been popular in Europe for its good concentration in essential nutrients. This solid, nutty, super-fast growing vegetable is generally eaten when above 8 centimeters. Long Zucchini has a mild flavor perfect for any squash dish and a high percentage of water. We even dry squash, store it in mason jars and use it later in the winter when it is a great treat in soups.
Zucchinis are filled with Vitamins A, C and with Manganese, allies improving the immune system and fighting inflammation. Potassium, in good concentrations, helps memory retention, bone and muscle strength. Finally, their dietary fibres improve digestion and slow the rate of sugar absorbed into the bloodstream.
With a dark green skin, zucchinis have a delicate, almost sweet flavor with a thin, soft skin and edible seeds.
