Astros, with a history tracing to the 13th century, saw its first cellar in 1637. In 1860, his grandson Marc Maximin Martin built a Tuscan-inspired Château. Today, the eighth-generation family head, Bruno Maurel, leads the transition to organic farming since 2021. Temperature control is paramount to produce quality Rosé, that’s why Minuit Rosé’s grapes are harvested at night to preserve it from the day’s heat.
