Native to ancient Persia, Spinach then crossed into India before reaching China where it got the name of “Persian vegetable”. This leafy green flowering plant can grow as tall as 30 cm with leaves that can have a width of up to 15 cm. Its leaves can be consumed either raw or cooked but this makes the taste differ considerably. The leaves are ovate to triangular and very variable in size, with larger leaves at the base and small leaves higher on the flowering stem.
