Also called chicory, Endive is one of the earliest plants cited in recorded literature. It was discovered by chance in 1830 by a farmer in Brussels, Belgium, who stored some chicory roots in his cellar planning to dry and roast them for coffee. He left his farm several months and when he returned, he discovered that the roots had sprouted small white leaves, crunchy and tender.
