A typical product of Northern Italy, Bresaola is a dried and salted beef aged for two to three months until it becomes firm and dark red, almost purple. On the palate, it offers subtle hints of spice such as garlic, pepper, and juniper berries. Compared to many other cured meats, this Lombardian specialty is lean and rich in nutritional quality.
Serve it as an “antipasto” or your next starter. Enjoy it thinly sliced, drizzled with a drop of extra virgin olive oil, a pinch of salt, and a lemon drop for a bright finish. In a sandwich, pair it with peppery rocket (arugula) or creamy cheese for a delicious and healthy snack.
Bresaola also pairs beautifully with shavings of Parmesan cheese, finished with a drizzle of high-quality olive oil. For wine, a dry red such as Nebbiolo or a sparkling Lambrusco complements its delicate, spiced flavours perfectly.
