This classic cheese is still handcrafted by Mauri using fresh Italian milk and features a longer aging period compared to the Dolce version. The processes of salting, turning, and packing are all done by hand, preserving the traditional methods of the past.
Gorgonzola Piccante has a firmer, denser texture than the Dolce variety, with more intense and widespread blue-green marbling. It is firm but not dry, fragrant without being overpowering, and offers a bold flavour profile.
Ideal on a cheese board served with nuts and honey, Gorgonzola Piccante is also a versatile ingredient in many recipes. It’s delicious crumbled over salads, used as a rich sauce for pasta, or melted on top pizza. This cheese pairs wonderfully with most Pinot Noir wines as well as the classic Barolo.

This is a rather nice gorgonzola – don’t be put off by the “piccante”: it’s not particularly sharp, just clearly blue cheese, and a rather nice one.
