Second only to Feta in popularity, Graviera is a cherished Greek cheese with Protected Designation of Origin (PDO) status, crafted by Karalis Dairy in the mountainous Epirus region. Made exclusively from free-range sheep and goat milk sourced from local breeds in Sohos, it contains no preservatives or additives.
Its extended maturation period and low moisture content yield a firm texture, a bold, nutty flavour characteristic of Greek cheeses, and a lingering finish with sweet, buttery undertones.
Enjoy Graviera on a cheese board: Allow it to rest at room temperature for 30 minutes to fully develop its aroma and flavour. Pair with wine, fresh fruit, and nuts for a classic Greek experience. For a hot appetizer, pan-fry it as saganaki (check out the recipe here) or melt it into soufflés and gratins for an indulgent twist.
It can be stored in an airtight container in the fridge for at least a couple of weeks.
