This pressed, uncooked raw cow’s milk cheese demands 500L of milk for each 40kg wheel and exclusive summer crafting when herds graze high-altitude pastures.
Its firm yet surprisingly creamy texture melts on the palate after a minimum 210 days of maturation, revealing intense flavours of dried hazelnut, wild herbs, and toasted notes. Each piece, marked with the emblematic bull of the Aubrac breed, embodies a 12th-century cheesemaking tradition.
