Basic Cooking Instructions:

• Remove the veal rib from the refrigerator and let it come to room temperature for about 30 minutes before cooking.
• Preheat your oven to 150°C.
• Pat the veal rib dry with paper towels. Season generously with salt and freshly ground black pepper.
• In a hot skillet, sear the veal rib on all sides over high heat until deeply caramelized, about 2–3 minutes per side.
• Transfer the rib to an oven-safe dish and finish cooking in the preheated oven until the internal temperature reaches 60°C for medium-rare, about 15–20 minutes depending on thickness.
• Let the meat rest for 5–10 minutes before slicing, to retain its juices and tenderness.
