The Bourgueil AOC Noms D’Oiseaux from Domaine de la Chevalerie carries a remarkable heritage, with the Caslot family cultivating vines in Restigné since 1640, now guided by Laurie, Emmanuel, and Stéphanie across 14 generations . This cuvée’s evocative name serves as a gentle warning, highlighting the urgent need to protect biodiversity in the region . Crafted from 100% Cabernet Franc grapes grown on sandy clay soils, the wine is produced under organic and biodynamic principles, with manual harvesting, gentle maceration, and aging in concrete vats to preserve its pure, expressive character .

The taste is a beautifully generous expression of red fruits, revealing an intense nose of crushed strawberries, cherries, and subtle floral notes of violet . The palate is full, rich, and wonderfully round, supported by velvety, elegant tannins that create a smooth, supple texture .
