The Fournier Longchamps family has cultivated these schist rich slopes since 1860. This legendary appellation is renowned for producing Chenin Blanc of extraordinary intensity. The taste reveals a brilliant golden hue, with an intensely aromatic nose of ripe pear, quince, honey, beeswax, and flinty minerality. The palate is full bodied and richly textured, yet balanced by vibrant acidity, leading to a long saline finish with hints of dried apricot. Serve between 12 and 14°C. This versatile white pairs magnificently with scallops in beurre blanc, roast poultry with morel mushrooms, and aged goat cheeses. For a classic pairing, try it with monkfish or turbot, whose firm texture echoes the wine’s complexity and mineral drive.
