Osso Buco, a classic Italian dish from Milan, is made by braising veal shanks in white wine and broth. The name “osso buco” means “bone with a hole,” referring to the marrow-filled center that adds rich flavour to the dish.

This fresh Veal Osso Buco features tender, juicy meat with a delicate taste. The marrow infuses the meat, making it perfect for slow cooking until it becomes melt-in-your-mouth tender and hearty.

Prepared in France by the renowned butcher Metzger Frères, who supplies prestigious Michelin-star restaurants, these two veal shanks represent top quality.

How to cook:
Season the veal shanks with salt and pepper. Lightly dredge them in flour.
Heat olive oil in a pan over medium-high heat.
Sear the shanks on all sides until golden brown.
Reduce the heat to low, cover, and cook gently in the pan with a little broth or water (just enough to keep them moist) for about 1.5 to 2 hours until tender, turning occasionally.
Remove and serve with your choice of side.
