Squash, Delicate from Italy

Italian Delicate Squash is a small, round winter squash with deep green skin marked by fine pale speckles and ridges. When cut open, it reveals vibrant golden-orange flesh and a central cluster of edible seeds. Its flesh is naturally sweet, creamy and gently nutty, with a smooth texture that becomes tender and almost buttery when cooked.

This versatile squash is delicious roasted, baked, steamed or added to soups and risottos. Cut it into wedges and roast with olive oil, salt, sage and rosemary until golden and caramelised. It is also excellent filled with ricotta, Parmesan, chestnuts or sausage. Serve it alongside roast meats, autumn salads or rich cheeses for a comforting seasonal dish.
