This lamb leg is perfect for slow roasting, allowing the meat to become incredibly tender while developing a rich, aromatic flavour that is enhanced by herbs and spices.
Whether you’re preparing a traditional Sunday roast or a festive holiday meal, this lamb leg is sure to impress. The juicy, tender meat and robust flavour make it a centerpiece worthy of any special occasion, offering a taste of culinary excellence that your guests will remember.
Simple Roasting instructions:
1. Bring the lamb to room temperature for one hour. Preheat oven to 200°C (180°C fan).
2. Make small incisions in the skin and insert slivers of garlic and rosemary sprigs.
3. Rub all over with olive oil, season generously with salt and pepper, and place in a roasting tin.
4. Roast for 20 minutes, then reduce heat to 180°C (160°C fan) and cook for approximately 25 minutes per 500g for medium, or until your desired doneness is reached.
5. Rest, covered loosely with foil, for 20 minutes before carving.
