This traditional method results in meat with a firm texture, golden skin, and a deep, savoury flavour that is remarkably juicy and tender. To truly appreciate its quality, we recommend roasting it simply with butter and herbs to allow the meat’s natural richness to shine, or using it in a hearty stew where its robust character stands up beautifully. For the perfect pairing, we suggest a crisp Chardonnay or a floral Viognier from the Ardèche region itself, whose mineral notes and bright acidity complement the chicken’s savoury depth. This product is a versatile and sublime choice for any discerning table.

Basic Cooking Instructions:
Preheat oven to 200°C.
Bring the chicken to room temperature 30 minutes before cooking.
Pat dry and season with salt, pepper, and herbs.
Place in a roasting pan, breast side up. Add olive oil or butter on top.
Roast for about 20 minutes per 500g, or until the internal temperature reaches 74°C.
Baste occasionally during cooking.
Let rest for 10 minutes before carving.
