Manchego Gran Reserva, aged for 12 months, represents the peak of this craft, showcasing the deep, complex flavours that develop over time. The cheese’s signature herringbone rind dates back to when it was molded in woven esparto grass, a nod to its rich history in the vast plains of La Mancha, home to the legendary Manchega sheep.
This extra-aged Manchego has a firm, ivory-coloured interior with a natural, slightly darker rind. The aroma is bold, with rich nutty notes and a touch of caramel. On the palate, it delivers an intense, savoury depth, blending roasted nuts, aged butter, and a delicate sharpness that lingers. The texture is compact yet crumbly, with small, crystalline grains adding a delightful crunch.
Pair Manchego Gran Reserva with a bold Ribera del Duero red wine. The deep berry flavours and structured tannins complement the cheese’s intensity, creating a balanced and indulgent Spanish tasting experience.
