Produced in the heart of Corsica by Fromagerie Don Simoni, Tomette Brebis is a semi-hard cheese made exclusively from ewe’s milk. Don Simoni has been crafting traditional Corsican cheeses for decades, using milk from local flocks and methods passed down through generations. Their approach emphasizes quality, terroir, and the preservation of island cheese heritage.

Tomette Brebis has a natural, rustic rind and a firm yet creamy interior. The flavour is well-balanced: nutty, slightly tangy, and rich with the subtle grassy notes typical of sheep’s milk. It develops more complexity as it ages, offering a lingering, savoury finish that pairs beautifully with rustic breads or cured meats.

Pair it with Castillon Côtes de Bordeaux AOC, L’Hêtre, 2018. The wine’s structure and dark fruit depth complement the tomette’s richness, while soft tannins round out the cheese’s delicate saltiness and earthy notes.
