U Campagnolu is a rustic Corsican cheese from Fromagerie Don Simoni, a family-run dairy rooted in the village of Venzolasca. Known for their dedication to traditional Corsican methods and local sourcing, Don Simoni has become a reference in preserving the island’s rich cheesemaking heritage. Made with full-fat sheep’s milk, U Campagnolu meaning “he who lives in the countryside”, is a reflection of the maquis-covered hills and transhumant shepherding culture of Haute-Corse.

Its natural rind encases a smooth ivory paste with a supple, creamy texture. On the palate, U Campagnolu offers mild, nutty flavours with hints of wild herbs and a gentle savoury finish that intensifies with age. Its balance makes it both accessible and characterful.

Pair with Patrimoniu AOP, Domaine Montemagni, Menhir Rouge. The wine’s red fruit and subtle spice complement the earthy undertones of the cheese, enhancing its depth without overpowering its soft character.
