Originating from the Champagne region, Chaource is often hailed as the “Queen of Cheese” and has a rich history dating back to the 10th century when it was favoured by French royalty.
Made from whole thermised cow’s milk, this soft cheese features a delicate white bloomy rind and a smooth, supple texture with a lightly salty, chalky center. When young, Chaource exudes fresh cream aromas, but as it matures over two to four weeks, it develops rich, buttery flavours complemented by subtle hints of hazelnut and mushroom. Its taste evolves from a bright tartness to a deeper, earthy richness.
Renowned for its elegance and complexity, Chaource is perfect for spreading on crusty bread or toast. It pairs beautifully with crisp white wine or Champagne, which cut through its creamy richness. Additionally, it makes an elegant aperitif when served in small pieces alongside a glass of Port or Champagne, making Chaource a versatile and refined choice for any cheese platter or special occasion.
