Vacherousse d’Argental is a French cow’s milk cheese produced by Fromagerie Guilloteau in the Lyon region. Since its creation in 1981, the cheese dairy has been making its cheeses using a special skill and a unique technique: ultrafiltration, developed by Mr. Guilloteau. This step involves filtering the milk through very fine membranes to remove excess water while retaining nutrients and minerals.
This soft, double cream cheese, prized for its incredibly creamy and silky texture, has a rind washed with salt water, covered with white mold and then a slight orange tint, hence its name “Vacherousse,” meaning “red cow.”
Vacherousse d’Argental is often described as a “pleasure” cheese and is highly appreciated for its mildness.
It is perfect served with crusty bread, and its mild, creamy flavor makes it a cheese that appeals to a wide audience.
Sparkling wine or a dry white wine is an excellent choice to contrast the richness of the cheese.
Can be stored in the fridge for two to three weeks after being opened, or two months if the packet is untouched.
