The Janier family has upheld a tradition of cheese-making excellence in Lyon since the late 19th century. It all began with Clément-Félix Janier, who boldly introduced Comté from his village to the bustling markets of Lyon. His grandson, Maurice Janier, transformed the family business from mere merchants into passionate curators of fine cheeses.
Today, the legacy is carried forward by Christian Janier, a celebrated Meilleur Ouvrier de France winner, who leads the fourth generation with dedication and pride. Working closely with small farms, he continues the artisanal tradition of aging exceptional raw milk cheeses, preserving a rich heritage of French cheesemaking.
Comté 16 Months is our highlight of the month and a very special variety. Crafted from raw cow’s milk grazing verdant Jura pastures, it offers a rich, fruity, buttery flavour perfectly balanced by nutty caramel notes, complemented by a firm yet creamy texture. This delight of the French palate features delightful crystals of tyrosine, delivering a memorable, powerful taste.
Perfect as an aperitif on cereal or nut bread, complemented by a yellow wine or a refined white Burgundy, this aged Comté can be stored in the refrigerator for up to five weeks.
