Star Ruby grapefruit is a variety of Citrus paradisi that was first developed in Texas in the 1970’s through natural selection and breeding for deeper pigmentation. Its rind is yellow-orange with a pronounced crimson blush that signals maturity. The peel is thin to medium in thickness and richly aromatic, infused with volatile oils that release an intense bouquet of citrus notes when punctured or zested. The flesh of the Star Ruby is the darkest of all red grapefruit varieties, a saturated ruby-red that is often seedless, delivering a juicy texture and a flavor that is sweet-tart with less bitterness than traditional grapefruit.
