Under the discerning eye of Christian Janier, Meilleur Ouvrier de France, only farmhouse wheels made from raw milk in the volcanic pastures of Auvergne meet their exacting standards for balance and depth.
This farmhouse blue cheese is crafted from raw cow’s milk and features a creamy, slightly crumbly paste generously marbled with delicate blue-green veins. Its flavour is robust yet well-rounded, offering a harmonious blend of piquant, spicy notes with underlying hints of fresh cream and wild mushrooms.
An outstanding addition to any cheese board, it pairs wonderfully with a sweet white wine such as Sauternes or a late-harvest Gewürztraminer, which beautifully contrasts its saltiness. It also excels crumbled over steak or in a rich salad, or simply spread on walnut bread with a drizzle of honey.
Storage: Keep refrigerated, wrapped in foil or wax paper to preserve moisture. Remove from the refrigerator about 30 minutes before serving.
