From the high Aravis massif, this Tommette de Brebis Fermière is a raw ewe’s milk disc, rare in Savoie. Maison Paccard’s affinage honors its rustic, fleecy soul: the natural grey rind is rough, dusty, and speckled with wild molds. Inside, the paste is dense, creamy, and slightly grainy—a honest, woolly texture from single-herd farming. No lamination, no polish.
Under Paccard’s patient hand, the lactic sweetness meets nutty, toasted-hazelnut depth, with subtle game and wild thyme. The brebis milk brings a rich, buttery length that lingers, yet the cheese stays humble and untamed. This tommette is small but fierce—a rustic jewel aged on spruce, turning slowly in damp cellars. The rind is edible, earthy, and wonderfully musty.
