Maison Paccard’s affinage respects its rustic, lively soul: the paste is dense, chalky at heart, yet melts slowly into a herbaceous, lemony cream. No added binders—just farmstead milk and patient turning on spruce boards.
Under Paccard’s care, the fermier tang sharpens into wild mint, hazelnut, and dried hay, while the crust stays rough and mottled—a badge of honest cellaring. This tommette is small, humble, and hand-salted, with an uneven, natural bloom that speaks of mountain humidity and slow breathing. Rusticity here is not a flaw but a flavor: barnyard, straw, and fresh goat.
