This fresh pasta filata cheese from Campania delivers an incredibly tender, milky texture that bursts with rich, sweet cream upon biting. The outer layer is thin and glossy, while the interior is soft, layered, and oozing with fresh whey. Unlike cow’s milk mozzarella, this buffalo version is decadently rich, tangy, and buttery—never rubbery or bland.
Made exclusively from water buffalo milk in select regions of southern Italy (Caserta, Salerno), this DOP-protected cheese follows ancient traditions. The curd is stretched by hand (pasta filata) into pearl-white, 125g balls, then packaged in their own whey. Best consumed within 24–48 hours of production—a freshness test: the tighter the knot, the younger and more delicate the cheese.
Serve at room temperature with ripe tomatoes, fresh basil, a drizzle of olive oil, and cracked black pepper (Caprese salad). Pair with Falanghina or Greco di Tufo white wines. Also, delicious melted on pizza, layered in panini, or torn over grilled vegetables. A Creamy, luscious treasure.
