Maison Paccard’s affinage respects its fragile, chalky heart: the bloomy white rind cracks slightly, revealing a dense, crumbly paste that melts on the tongue like fresh snow. This is farmhouse goat at its most honest.
Under Paccard’s care, the lactic tang evolves into lemon, hazelnut, and wild herbs, yet the rustic soul remains untouched—no plastic texture, no aggressive acidity. The cheese is small, humble, and hand-ladled, with an uneven crust that speaks of stone cellars and patient turning. Unlike cooked curds, this lactique style keeps the goat’s purity and a fluffy, moist fragility.
