From the heart of Southwestern France comes a specialty rooted in Basque tradition – sausages prepared with the ancient confit method. Slowly cooked and preserved in rich duck or pork fat, they embody centuries of craftsmanship, delivering extraordinary tenderness and a deep, savory character that makes them stand out from ordinary sausages.
Maison Mayté, a historic family‑run charcuterie rooted in the French Basque Country since 1884, crafts these confit sausages with generations of artisanal expertise and a genuine dedication to preserving true Basque traditions.
Known in Basque as Urreineko Lukinkak, these confit sausages are fully cooked and ready to enjoy. A quick warming in a skillet or oven brings out a crisp, golden skin, while the inside remains succulent and aromatic. Serve them piping hot with rustic sides such as roasted potatoes or braised lentils, and pair with a bold red wine from the Southwest for an authentic regional experience.
