Its flavour is earthy and nutty, with subtle notes of celery and a refreshing, slightly peppery finish. When raw, it is crisp and fresh – when cooked, it becomes tender and mellow, making it ideal for mashes, soups, stews and gratins.
For a classic French preparation, try Celeriac Rémoulade : peel and grate the celeriac, toss it with lemon juice to prevent browning, then mix with mayonnaise, Dijon mustard, a little yogurt or sour cream, salt and pepper. Let it rest in the fridge for 30 minutes before serving with crusty bread, charcuterie or grilled fish.
