Hailing from the sun-drenched Balearic island of Menorca, Mahón-Menorca AOP is one of Spain’s most iconic traditional cheeses. Hand-shaped using a classic cotton cloth called a fogasser, it is instantly recognizable by its cushion-like square form with rounded corners and a vibrant rind rubbed with olive oil and pimentón.

Beneath its striking orange casing lies a smooth, pale yellow paste with a supple, semi-firm bite. On the palate, it releases a melt-in-the-mouth, buttery texture complemented by a savory depth of toasted nuts, fresh dairy, and a subtle salinity born from island pastures swept by sea winds.

An indispensable addition to high-end cheese boards and tapas spreads, it pairs wonderfully alongside crusty sourdough bread, sweet fig jam, or toasted almonds. Serve it with a glass of crisp white wine, a light-bodied red, or a chilled Prosecco.
