Tomme des Croquants with Truffle is a semi-hard cheese made in the Périgord region by Fromagerie Baechler. Marbled with black truffle flakes, it honors the “Croquants,” 16th- and 17th-century peasants who resisted heavy taxes in southwest France. The name, once a noble insult meaning “those who crunch,” was embraced as a symbol of pride and defiance.
Revived in 2005 by master cheesemaker Frédéric Villefer, this cheese has a delicate white rind and a silky, milky, supple paste. Washed with nut liquor and caramel during aging, it reveals fruity notes and a balanced hint of nuts. The black truffle adds deep, earthy aromas and rich umami that perfectly complement the creamy base, creating an elegant and complex flavor.
Ideal on cheese boards with milder cheeses, it pairs beautifully with Burgundian Pinot Noir or Bordeaux wines such as Côteaux Bourguignons AOC Vignerons de Buxy 2020 or Saint-Estèphe AOC Château Le Boscq 2018.
