Also called *”Swiss Blue”*, its name comes from the contraction of the word **Bleu** and ***Neuchâtel***, its native canton in Switzerland. This cheese carries the legacy of Swiss blue cheesemaking, a craft that flourished in the Neuchâtel region, where the unique cellar conditions and artisanal methods created a blue cheese distinct from its French and Italian counterparts.
**Bleuchâtel** is made from thermised cow’s milk and features a beautiful blue-marbled soft paste due to the presence of *Penicillium Roqueforti*. As strong as it is creamy, with a good balance of saltiness and fruity hints, this blue cheese is perfect **spread on toast** or added in small pieces to your salad. Its assertive yet balanced character also makes it excellent for crumbling over steak or stirring into a creamy pasta sauce.
Pair this versatile blue with a sweet Sauternes or a robust porter to complement its complex flavor profile.
**Storage:** Can be stored for up to 3-4 weeks in the fridge in its original packaging.
