The “Extra” designation indicates a longer aging period of at least six months, resulting in its signature robust character.
Appenzeller® Extra is a bold Swiss cheese with a rich, nutty flavour and a firm, yet supple texture. This extended aging allows it to develop distinct spicy and tangy notes, creating a wonderfully complex taste profile that finishes with a satisfying, slightly creamy sensation on the palate.
Perfect for a cheese board, it pairs excellently with a robust red wine like a Syrah or a malty dark ale. Its intense, complex flavour also makes it a superb choice for elevating gratins, rustic tarts, or as a standout addition to a classic fondue, where it adds a delightful depth.
