The Poivrade artichoke, also known as the “Violet de Provence,” is a distinct variety native to the Mediterranean region of France. It is smaller and more elongated than common globe artichokes, with tight, violet-green bracts.
Prized for its tender texture, the entire Poivrade artichoke, including much of the stem, is edible with minimal choke when harvested young. Its flavour is robust, nutty, and slightly more intense than larger varieties.
This artichoke is particularly suited for quick-cooking methods. It is ideal for sautéing, roasting whole, or preparing à la barigoule. Its smaller size also makes it excellent for pickling, preserving, or grilling.
