Azeitao is a renowned traditional cheese from the Alentejo region in southeastern Portugal. Crafted from raw sheep’s milk, it owes its distinctive characteristics to the region’s unique climate, soil, and pastures. The cheese is coagulated using thistle flower extract (Cynara cardunculus), a method that imparts a unique aroma and flavour. During production, Azeitao DOP is wrapped in cloth and matured in cellars for a minimum of 30 days.
Visually, Azeitao has a light to straw-yellow rind with a soft, creamy interior that may contain tiny holes. It offers a strong, spicy, and slightly sweet-tart aroma and flavour. When aged for over a year, the cheese hardens, developing a crumbly texture similar to Parmesan, with intensified spicy notes.
To complement Azeitao’s robust profile, consider pairing it with Alentejo DOC, Três Ânforas, Howard’s Folly, 2019. This Alentejo wine’s rich, fruity depth will harmonise beautifully with the bold, spicy, and slightly sweet-tart flavours of Azeitao, creating a well-rounded and satisfying pairing.
