Serpa is a renowned traditional cheese from the Alentejo region in southeastern Portugal. Crafted from raw sheep’s milk, it owes its distinctive characteristics to the region’s unique climate, soil, and pastures. The cheese is coagulated using thistle flower extract (Cynara cardunculus), a method that imparts a unique aroma and flavour. During production, Serpa DOP is wrapped in cloth and matured in cellars for a minimum of 30 days.
Visually, Serpa has a light to straw-yellow rind with a soft, creamy interior that may contain tiny holes. It offers a strong, spicy, and slightly sweet-tart aroma and flavour. When aged for over a year, the cheese hardens, developing a crumbly texture similar to Parmesan, with intensified spicy notes.
To complement Serpa’s robust profile, consider pairing it with Alentejo DOC, Três Ânforas, Howard’s Folly, 2019. This Alentejo wine’s rich, fruity depth will harmonise beautifully with the bold, spicy, and slightly sweet-tart flavours of Serpa, creating a well-rounded and satisfying pairing.

This is a most excellent cheese in the “washed rind” style. Quite intense aroma and taste, but in a balanced (some spice, but also creamy and tart… complex) way, not horribly stinky.
For me it is pairing very nicely with a brut nature champagne.
