The heritage of producing exquisite wood-aged vinegars in Emilia-Romagna dates back to the 11th century, during the Este family’s rule over the Duchy. In the Middle Ages and Renaissance, these vinegars were prized by the aristocracy not only for their refined taste but also for their believed ability to alleviate the effects of the plague.
Made from a blend of 60% cooked grape must and 40% wine, the vinegar is carefully aged in oak barrels, which impart a complex character. It offers a tangy yet sweet flavour balanced by a strong, vibrant acidity.
This traditional aging process, often carried out in a series of wooden casks made from various woods such as oak, chestnut, and cherry, allows the vinegar to develop its distinctive aroma and rich depth.
A few drops of balsamic vinegar cream pair wonderfully with Parmigiano Reggiano or fresh strawberries, enhancing their flavours with a perfect balance of sweetness and acidity.
