Made with Abondance and Tarine cows from one herd, Beaufort Chalet d’ Alpage is a rare traditionally made mountain cheese produced between June 15th to September 15th every year at the altitude of 1500 meters. The hard and yellow straw paste of this AOC cheese is full of the aromatic flowers and alpine flora notes. Creamy, nutty and a bit buttery the cheese is melting on the palate. This charismatic cheese is ideal to pair with walnuts and a glass of Chardonnay.
