As the Comté cheese, Beaufort, born in the Middle Ages and descendant of ‘Vachelin’ was, at first, created to keep the milk longer and was a protein source all year long for the family consumption. AOC Beaufort can be find in 3 versions: Summer, Winter and Chalet d’Alpage. This time, at cheese club, we would like to introduce you our Summer Beaufort 2020. It is aged for 18 months and has a soft and creamy paste, a franck floral bouquet and a buttery taste. Only produced during summer between May and October to ensure that the cows graze in the mountain pastures, it is beautiful with a Roussette de Savoie, slightly dry to refresh your mouth!
