Fine-grained texture, rich buttery flavour, deep nutty notes, and bone-in juiciness deliver unmatched tenderness.

1. Bring to room temperature (30-45 min).

2. Season generously with salt and pepper.

3. Sear in hot pan/grill 2-3 min per side for medium-rare.

4. Rest 5-10 min before slicing.
