Beef Picanha, Angus Grass-Fed (Chilled) – Large

Basic cooking instructions:

1. Remove from the fridge and allow to reach room temperature for 30 minutes before cooking.
2. Season generously with coarse salt and freshly ground pepper.
3. Sear fat-side down on high heat for 3–4 minutes until crisp and golden.
4. Turn and sear the meat side for 2–3 minutes.
5. Transfer to a preheated oven at 190°C (375°F) and cook for 15–20 minutes for medium-rare.
6. Let rest 10 minutes before slicing against the grain.
