Pair it with Patrimoniu AOP, Domaine Montemagni, Menhir Rouge, a structured Corsican red with enough depth to match the tomahawk’s intensity and charred edges.
Thaw in the fridge overnight. Grill over high heat for 4–5 minutes per side, then finish over indirect heat or in the oven at 180°C (350°F) until desired doneness. Rest at least 10 minutes before slicing.
