Bleu d’Auvergne is a traditional French blue cheese crafted from raw cow’s milk. Its distinctive blue veins are evenly dispersed throughout the cheese, created by piercing the cheese with long needles that encourage the development of Penicillium glaucum mold.
Maturing for a minimum of two weeks, Bleu d’Auvergne develops a moist, crumbly texture and an intense aroma. Its complex flavour profile is pastoral and spicy, with salty notes that evoke fresh grass and wildflowers. Compared to many other blue cheeses, it is milder, less salty, and features a creamier, buttery taste alongside a softer, moister texture.
This cheese pairs beautifully with dessert wines, whose sweetness provides a delicate counterbalance to Bleu d’Auvergne’s bold character.
For optimal freshness, store Bleu d’Auvergne in its original packaging in the refrigerator for up to 3 to 4 weeks.
