Bleu des Causses is a distinguished blue cheese from the Causses region in southern France. Its history dates back to the Middle Ages when it was traditionally aged in natural limestone caves. This cheese received AOC status in 1979, ensuring its authentic production methods.
Bleu des Causses has a creamy, crumbly texture and a strong, tangy flavor with hints of sweetness. The blue veins, resulting from the addition of Penicillium roqueforti, give it a distinctive appearance and robust taste. Its aroma is both earthy and slightly spicy.
Pair Bleu des Causses with a sweet Sauternes or a robust red wine like Cahors. Store in the refrigerator wrapped in foil or wax paper to maintain its flavor and texture.

This is sort of like a cross between a stilton and a roquefort – quite firm and crumbly in texture. It has a fairly strong taste without the creaminess that roquefort has. All in all a decent blue cheese, but I prefer a nice roquefort.
