Close cousin of Chabichou du Poitou, ‘Bondon à la fleur de sel’ is also produced in poitou Charentes. Firm in texture, the cheese keeps a supple paste. Delicate hazelnut flavour with goatty notes, the rind of the cheese sometimes presents some white, yellow and bluish molds. The main caracteristics of the cheese: it is refined with some salt ‘fleur de sel’, the best quality unrefined salt.
