The Bouchot Mussels from Mont Saint-Michel is the only with the PDO label.
Traditional breeding on sea stakes, “Bouchot” means wooden fence, which prevents them from coming into contact with the ground and therefore sands and parasites.
Benefiting from the biological richness of a unique territory where the highest tides in continental Europe are found, their characteristics are singular: finely iodized, with a specific taste of hazelnut and a slight sweet notes. Their flesh is creamy, silky, and not floury.
Food Pairing:
Wash and sort the mussels, discarding those already opened, then place them in the pan. Cover and heat for 9 minutes, stirring halfway through.

Very small, but tastes good

Extremely fresh, delivered chilled and not frozen. Easily cooked. However, these are also the smallest and sweetest mussels I have had – if you are looking for strong shellfish flavors or you prefer larger bites, these aren’t the mussels you’re looking for.
